Honey

The skin is removed but some sticky mucilage is left on during drying. The more mucilage and the slower the drying, the darker the grade (white, yellow, red, black) and the sweeter and fruitier the cup.

Steps

  1. Pick ripe cherries
  2. Pulp, leaving some mucilage
  3. Dry (white, yellow, red or black honey)
  4. Hull
